PRE-COOLING OF FRUITS & VEGETABLES USING DRY ICE

Dry ice

Solid Carbon Di-oxide (dry ice) was used in the trials because it was easy-to-handle, did not requirement any equipments and cost effective for the preliminary trials.

TRIALS CONDUCTED AT CALICUT: RECORDINGS

EXPERIMENT : 1 WITH FRUITS IN THERMOCOLE BOX

INITIAL READINGS

Ambient Temperature
(+) 28 ° C
Fruits type used for trials
Banana (Nenthran) 12 kg
Starting Time
1.05 PM
Dry Ice used
6.5 kg
No. of dry ice blocks used
4 each weighing around 1.5 kg
Dry ice kept as
Naked and two blocks are kept one over the other. Polythene cover kept opened.

REMARKS : BANANA STORED BETWEEN (+) 13 TO (+) 15 °C. BY CONTROLLING THE ATMOSPHERE, THE TEMPERATURE COULD BE BROUGHT TO AROUND 12 °C.

PRECAUTION : WASH FRUITS THOROGHLY TO GET RID OF WATER-SOLUBLE PESTICIDES & TO BRING DOWN THE HEAT FROM THE SURFACE OF THE FRUITS. KEEP DRY ICE BLOCK OPEN INSIDE THE BOX TO GUIDE THE GAS VAPOUR. DO NOT OPEN THE THERMOCOLE BOX OFTEN.

REMARKS : : BANANA STORED BETWEEN (+) 17 TO (+) 18 °C WHICH NEED TO BE BROUGHT DOWN FURTHER TO 12 °C.

PRECAUTION : FRUITS & DRY ICE SHOULD NOT BE PLACED ON CEMENT FLOOR. WASH THE FRUITS TO REDUCE ATMOSPHERIC HEAT & TO REMOVE WATER-SOLUBLE PESTICIDES. NEED DRY ICE BLOCKS TO MAXIMISE THE COOLING EFFECT. NO CHILLING INJURY FOUND.
